- 1 cup of dry garbanzo beans
- 1 small red onion quartered
- 1 tbsp ground coriander
- 1 clove of garlic
- 2 tbsps chickpea flour
- 1 tbsp sriracha sauce
- ½ tsp baking powder
- 1 serving cooking spray
- 1 tbsp ground cumin
- ¼ tsp baking soda
- 1½ cups of fresh cilantro stems removed
- 1 pinch of salt and ground black pepper to taste
- ¾ cup of fresh flat-leafed parsley stems removed
Instructions
- Soak garbanzo beans in a large amount of cool water for 24 hours. Rub the soaked garbanzo beans with your fingers to Spread garbanzo beans on a large clean dish towel to dry. help loosen and remove skins. Rinse and drain well.
- Blend garbanzo beans, cilantro, parsley, onion, and garlic in a food processor until a rough paste forms. Transfer mixture to a large bowl.
- Add chickpea flour, coriander, cumin, sriracha, salt, and pepper, then mix well. Cover bowl and let mixture rest for 1 hour.
- Add baking powder and baking soda to the chickpea mixture. Mix by your hands until just combined.
- Form 15 equal-sized balls and press slightly to form patties. Spray falafel patties with cooking spray.
- Select the preset program of Preheat to preheat the air fryer.
- Place 7 falafel patties in the preheated air fryer, then select the Preheat program again.
- Set the temperature to 375℉/190℃ and the time to 10 minutes, then press Start/Stop to cook.
- For the remaining 8 falafels, cook them in the same manner.

Italian Sausage Zucchini Boats

Ingredients
- 2 medium zucchini, cut in half lengthwise
- 6 oz Italian-style chicken sausage
- 2 plum tomatoes, seeded, chopped
- 1/4 cup finely grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 tsp olive oil
- 2 cloves garlic, minced
- 2 tbsp plain bread crumbs
- 2 tbsp chopped fresh basil
Instructions
- Select preset program of Preheat to preheat the air fryer.
- Scoop seeds out of zucchini halves using a teaspoon.
- Combine sausage, tomato, Parmesan, mozzarella, oil and garlic in large bowl.
- Spoon sausage mixture and mound into cavity of zucchini halves.
- Top stuffed zucchini halves with breadcrumbs and place into the air fryer.
- Set temperature to 375°F/190°C and time to 15 minutes, then press Start/Stop to cook until cheese is melted and bread crumbs are golden-brown.
- Garnish with basil and serve.
- Tip: Use hot or mild Italian-style sausage for a spicy kick!

Crispy Cornmeal Cod

Ingredients
- 1/2 cup cornmeal
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp freshly ground black pepper
- 1 tsp kosher salt
- 2 large eggs, beaten
- 4 (6-ounce) cod fillets
- 3 cups shredded purple cabbage
- 1 small carrot, shredded
- 2 tbsp mayonnaise
- 1 tbsp chopped fresh chives
- 1 tsp white vinegar
- 1 tsp celery seed
- Kosher salt and freshly ground black pepper, to taste
- Lemon wedges, for serving
Instructions
- Select preset program of Preheat to preheat the air fryer.
- Combine cornmeal, paprika, garlic powder, pepper and salt in a medium bowl. Add eggs to a separate medium bowl.
- Dip fish fillets into egg, then into cornmeal mixture, evenly coating each fillet.
- Spray crisper tray with olive oil cooking spray and place breaded fillets into the air fryer.
- Select Preheat program again, and set temperature to 320°F/160°C and time to 12 to 14 minutes, then press Start/Stop to cook. Repeat with remaining breaded fish.
- Meanwhile, toss cabbage, carrot, mayonnaise, chives, vinegar and celery seed in a large bowl. Season with salt and pepper.
- Serve breaded fillets with cabbage mixture and lemon wedges.
- Tip: Use halibut, tilapia or mahi mahi in substitution for cod.
